Rhizopus oryzae belongs to Rhizopus genus, which is a large genus of fungi in Mucor order and Mucoraceae. Rhizopus mycelia is generally multinucleated, and there is no septum component branched between the mycelia. The amylase system is developed, can produce lactic acid, and can transform and have the function of growing and saccharifying at the same time.

It can be used in the production of koji and wine, and is also the saccharifying bacteria of Xiaoqu wine.
