More than 100 kinds of bioactive substances such as flavonoids, nucleosides, pyrazines and terpenoids were detected from soft liquor by super-resolution mass spectrometry. Through molecular, cellular and animal experiments, the effects of soft liquor on autophagy and anti-oxidation of liver cells were studied. The research has a very high theoretical and practical guiding value for the improvement of quality, especially the improvement of health value of Chinese baijiu represented by soft baijiu, etc., and helps to analyze the scientific connotation that Chinese baijiu represented by soft baijiu is not equal to alcohol. The results can further achieve a new breakthrough in the quality of soft liquor, improve the comfort and pleasure of the product after drinking, promote the technological innovation and production and management of enterprises, and promote the technological progress and scientific development of the liquor industry.
