Analysis of drinking quality characteristics of Luzhou-flavor liquor
Based on the consumer preference model of EEG, the perception of Luzhou-flavor liquor was expressed digitally. The sensory evaluation combined with modern chromatographic analysis and multi-vector statistics were used to analyze and explore the flavor perception of "sweetness" in Luzhou-flavor liquor. The interactive model optimized the synergistic and subtraction relations between 16 kinds of aroma and sweetness, and revealed the synergistic mechanism of "sweetness" in Luzhou-flavor liquor. The standardized model of mouse evaluation of liquor metabolism was established, and the standardized quality evaluation index and analysis method were established. It has made a scientific expression for the product quality of enterprises and pointed out the direction for improving the product quality.
